Going on a Bilby Hunt!

Hello, dear Parents!

Instead of an egg hunt, we will have a Bilby hunt this year on Thursday, 4.17. The Bilby hunt ties back to our Australia studies for the year. The rabbit was introduced to Australia as an invasive species and has been incredibly destructive to their environment. The bilby is a native marsupial that some Australians have voted as their animal of choice to replace the rabbit as the Easter mascot!

I have a bilby-shaped cookie cutter. My plan is to make sugar cookie dough for the children and then invite them to use the cutter to make their bilby cookies. We will cook the bilbies, bag them, label them with the children’s names, and place them out on the playground for the hunt!

I am trying to make allergy-friendly sugar cookie dough. If you have a sugar cookie recipe that is dairy-free, egg-free, nut-free, and vegan (which should be easy with no dairy or eggs!), please let me know.
